Ingredients
- 175 g Butter
- 150 g Sugar
- 3 Eggs
- 0.5 untreated Orange (juice and zest)
- 175 g Flour
- 50 g ground almond kernels (peeled)
- 1 pinch Cinnamon powder
- 1 tsp Baking powder
- 125 g soft Butter
- 60 g Sugar
- 120 g Cream cheese
- 150 g Powdered sugar
- 12 Sugar decorations (-elements, with baby motifs)
- Crocant (for sprinkling)
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Line the cups of a muffin tin with paper liners.
- 3. Beat the butter with the sugar until fluffy.
- 4. Whisk the eggs with the orange juice and the orange zest.
- 5. Add the egg mixture along with the flour, almonds, cinnamon, and baking powder to the butter mixture.
- 6. Stir everything quickly until a homogeneous dough forms.
- 7. Fill the batter into the paper liners.
- 8. Bake the muffins for about 25 minutes until golden brown.
- 9. Check the baking time with a wooden skewer, which should come out dry.
- 10. Remove the muffins from the oven and let them cool on the tray.
- 11. Beat the butter for the cream with the sugar until creamy.
- 12. Fold the cream cheese into the butter mixture.
- 13. Stir in enough powdered sugar until the mixture is pipeable.
- 14. Fill the cream into a piping bag with a star tip.
- 15. Pipe a dollop of cream onto each cupcake.
- 16. Decorate the muffins as desired with sugar decorations and brittle.
- 17. Serve the muffins.
