🍽️ Sunny Nectarine Jam with Ginger & Vanilla

Ingredients
- 2000 g nectarine
- 75 g ginger (1 piece)
- 1 vanilla pod
- 500 g jam sugar (3:1)
- 1 lemon
- 50 ml Amaretto (or almond syrup)
Instructions
- 1. Thoroughly wash the nectarines under running water.
- 2. Cut the fruits in half and carefully remove the pits.
- 3. Cut the flesh into very small cubes.
- 4. Alternatively, you can puree the flesh finely with a hand blender.
- 5. Place the prepared nectarine into a large cooking pot.
- 6. Peel the ginger and cut it into coarse pieces.
- 7. Press the ginger pieces through a garlic press directly into the pot.
- 8. Slice the vanilla pod lengthwise.
- 9. Add the sliced vanilla pod to the pot as well.
- 10. Add the jam sugar to the nectarines.
- 11. Stir the mixture well until the sugar is distributed.
- 12. Let the mixture sit for one hour.
- 13. Rinse four screw-top jars (400 milliliters each) along with their lids with boiling water.
- 14. Place the jars upside down on a kitchen towel and let them drain.
- 15. Place the pot with the nectarine mixture on the stove.
- 16. Bring the mixture to a boil while stirring constantly.
- 17. Then let the jam boil vigorously for three minutes.
- 18. Cut a lemon in half.
- 19. Squeeze out two tablespoons of lemon juice.
- 20. Add the amaretto and the fresh lemon juice to the pot.
- 21. Let the jam continue to boil for one more minute.
- 22. Remove the vanilla pod from the hot jam.
- 23. Fill the hot jam immediately into the prepared jars.
- 24. Seal the jars tightly with the lids.
- 25. Place the sealed jars upside down for five minutes.
- 26. Then place the jars upright on the counter.
