🍰 Juicy Nectarine Cake with Crispy Almond Crumbles

Ingredients
- 250 g Butter
- 200 g Sugar
- 250 g Flour
- 200 g Ground Almond Kernels
- 100 g Almond Flakes
- 1 tbsp Cornstarch
- 4 Nectarines
Instructions
- 1. Cut the butter into small cubes.
- 2. Place the butter cubes into a small saucepan.
- 3. Melt the butter over very low heat.
- 4. Pour the melted liquid butter into a large mixing bowl.
- 5. Use a brush to pick up the remaining butter from the saucepan.
- 6. Grease a 26 cm (10 inch) springform pan with the butter.
- 7. Preheat the oven to 200 degrees Celsius.
- 8. Set the fan-assisted heat to 180 degrees Celsius.
- 9. Set the gas mark to 3 to 4.
- 10. Add the sugar to the liquid butter in the bowl.
- 11. Add the flour to the bowl.
- 12. Add the ground almonds to the bowl.
- 13. Mix everything together using a hand mixer on the lowest setting.
- 14. Stir until a crumbly dough forms.
- 15. Take about half of the crumble mixture.
- 16. Place this half into the prepared springform pan.
- 17. Spread the mixture evenly across the bottom of the pan.
- 18. Press the mixture down firmly to form a base.
- 19. Ensure the base is about half a centimeter thick.
- 20. Take half of the sliced almonds.
- 21. Scatter the sliced almonds evenly over the dough base.
- 22. Place the starch into a fine sieve.
- 23. Dust the starch evenly over the sliced almonds.
- 24. Wash the nectarines thoroughly under running water.
- 25. Halve the nectarines.
- 26. Remove the pits from the fruit halves.
- 27. Cut each fruit half into eight thin wedges.
- 28. Place the nectarine wedges overlapping on the prepared base.
- 29. Take the remaining crumble mixture.
- 30. Crumble the remaining mixture evenly over the nectarines.
- 31. Take the remaining sliced almonds.
- 32. Sprinkle the remaining sliced almonds over the cake.
- 33. Place the pan on the middle rack in the oven.
- 34. Bake the cake for 30 minutes.
- 35. Remove the cake from the oven.
- 36. Let the cake cool down completely in the pan.
