  1. 1. Wash the nectarines thoroughly.
  2. 2. Halve the fruits and remove the pits.
  3. 3. Process the fruit flesh into a juice.
  4. 4. Let the juice stand for about one hour.
  5. 5. Remove the foam rising to the surface.
  6. 6. Top up the juice with some apple juice to a total of 750 milliliters.
  7. 7. Set aside two tablespoons of the sugar.
  8. 8. Mix these two tablespoons of sugar with the gelling agent.
  9. 9. Add the sugar-gelling agent mixture to the juice.
  10. 10. Add citric acid and rose water.
  11. 11. Bring the mixture to a boil.
  12. 12. Add the remaining sugar.
  13. 13. Let the mixture bubble vigorously for three minutes while stirring constantly.
  14. 14. Add the flower petals to the hot mixture.
  15. 15. Fill the jelly immediately into prepared jars.
  16. 16. Seal the jars immediately.
