🥗 Fruity and Spicy Shrimp Nectarine Salad

Ingredients
- 2 Nectarines
- 200 g Mini Mozzarella Balls (45 % Fat in dry matter)
- 2 Handfuls Arugula (20 g each)
- 2 Handfuls Baby Spinach (20 g each)
- 2 Handfuls Mixed Leaf Salad (20 g each)
- 0.5 Bunch Parsley (10 g)
- 2 tbsp Balsamic Vinegar
- 1 tbsp White Balsamic Vinegar
- 1 tbsp Lemon Juice
- 1 tsp Liquid Honey
- Salt
- Pepper
- 7 tbsp Olive Oil
- 2 Garlic Cloves
- 350 g Large Shrimp (kitchen-ready, unpeeled, deveined)
Instructions
- 1. Wash the nectarines under running water.
- 2. Cut the nectarines in half.
- 3. Remove the pits from the nectarine halves.
- 4. Slice the nectarine flesh into thin strips.
- 5. Tear the mini mozzarella into small, irregular pieces.
- 6. Sort through the leaf salads (arugula, baby spinach, and leaf lettuce) and remove any damaged greens.
- 7. Wash the leaf salads thoroughly.
- 8. Dry the leaf salads using a salad spinner or a kitchen towel.
- 9. Place about two-thirds of the dry lettuce leaves on a large platter.
- 10. Wash the parsley.
- 11. Shake the parsley dry.
- 12. Chop the parsley finely.
- 13. Add both types of balsamic vinegar to a small bowl.
- 14. Add the lemon juice to the vinegar mixture.
- 15. Add the honey to the bowl.
- 16. Season the mixture with salt.
- 17. Season the mixture with pepper.
- 18. Add 4 tablespoons of olive oil to the bowl.
- 19. Whisk the dressing ingredients vigorously with a whisk.
- 20. Stir the chopped parsley into the dressing.
- 21. Taste the dressing and adjust the seasoning if needed.
- 22. Peel the garlic.
- 23. Chop the garlic very finely.
- 24. Rinse the shrimp.
- 25. Pat the shrimp dry with a kitchen towel.
- 26. Heat 1 tablespoon of oil in a pan.
- 27. Fry the nectarine slices in the pan over medium heat.
- 28. Turn the nectarines occasionally.
- 29. Fry the nectarines for 1 to 2 minutes.
- 30. Remove the nectarines from the pan.
- 31. Heat the remaining oil in the same pan.
- 32. Fry the shrimp in the pan over medium heat.
- 33. Turn the shrimp occasionally.
- 34. Fry the shrimp for about 4 minutes.
- 35. Add the garlic to the shrimp after about 2 minutes of frying time.
- 36. Season the shrimp and garlic with salt.
- 37. Season the shrimp and garlic with pepper.
- 38. Decoratively place the fried shrimp on the salad bed.
- 39. Decoratively place the fried nectarine slices on the salad bed.
- 40. Decoratively place the mozzarella pieces on the salad bed.
- 41. Distribute the remaining leaf salad on the salad bed.
- 42. Drizzle the finished salad with the dressing.
- 43. Serve the salad immediately.
