🍽️ Tomato Mussel Stew

Ingredients
- 2 kg mussels
- 2 shallots
- 2 garlic cloves
- 2 cm fresh ginger
- 2 tbsp olive oil
- 200 ml dry white wine
- 150 g cherry tomatoes
- salt
- pepper
- 200 g feta
- 2 tbsp fresh basil
Instructions
- 1. Rinse the mussels thoroughly under running water.
- 2. Pull off the beards from the mussels.
- 3. Discard any mussels that are already open.
- 4. Peel the shallots, garlic, and ginger.
- 5. Dice the vegetables into fine cubes.
- 6. Heat oil in a pot.
- 7. Sauté the vegetables until translucent.
- 8. Deglaze the mixture with wine.
- 9. Wash the tomatoes.
- 10. Cut the tomatoes in half.
- 11. Add the tomatoes and mussels to the broth.
- 12. Season with salt and pepper.
- 13. Cover the pot.
- 14. Steam the mussels for about 8 minutes.
- 15. Remove the pot from the heat once the mussels have opened.
- 16. Discard any mussels that did not open.
- 17. Crumble the feta cheese over the top.
- 18. Chop the basilica roughly.
- 19. Gently mix the cheese and basil into the stew.
- 20. Taste the broth and adjust seasoning if needed.
- 21. Serve the dish warm.
