  1. 1. Rinse the mussels thoroughly under running water.
  2. 2. Pull off the beards from the mussels.
  3. 3. Discard any mussels that are already open.
  4. 4. Peel the shallots, garlic, and ginger.
  5. 5. Dice the vegetables into fine cubes.
  6. 6. Heat oil in a pot.
  7. 7. Sauté the vegetables until translucent.
  8. 8. Deglaze the mixture with wine.
  9. 9. Wash the tomatoes.
  10. 10. Cut the tomatoes in half.
  11. 11. Add the tomatoes and mussels to the broth.
  12. 12. Season with salt and pepper.
  13. 13. Cover the pot.
  14. 14. Steam the mussels for about 8 minutes.
  15. 15. Remove the pot from the heat once the mussels have opened.
  16. 16. Discard any mussels that did not open.
  17. 17. Crumble the feta cheese over the top.
  18. 18. Chop the basilica roughly.
  19. 19. Gently mix the cheese and basil into the stew.
  20. 20. Taste the broth and adjust seasoning if needed.
  21. 21. Serve the dish warm.
