  1. 1. Rinse the mussels thoroughly under running water.
  2. 2. Remove the beards from the mussels.
  3. 3. Discard any mussels that are already open.
  4. 4. Peel the shallot and the garlic.
  5. 5. Finely dice the shallot and the garlic.
  6. 6. Heat oil in a large pan.
  7. 7. Sauté the shallots and garlic in the hot oil until translucent.
  8. 8. Deglaze the pan with the wine.
  9. 9. Add the mussels to the pan.
  10. 10. Cover the pan with a lid.
  11. 11. Steam the mussels for about 8 minutes.
  12. 12. Remove the mussels from the pan as soon as they have opened.
  13. 13. Discard any mussels that are still closed after 8 minutes.
  14. 14. Remove the cooked mussels from the broth using a slotted spoon.
  15. 15. Distribute the mussels onto plates.
  16. 16. Pour the broth through a sieve to strain it.
  17. 17. Season the broth with salt and pepper to taste.
  18. 18. Pour the broth over the mussels.
  19. 19. Serve the dish immediately.
