🍽️ Mussels in Wine Broth

Ingredients
- 3 kg mussels
- 4 tbsp olive oil
- 2 shallots
- 2 garlic cloves
- 2 tbsp finely chopped parsley
- 50 ml Noilly Prat
- 400 ml dry white wine
- 400 ml fish stock (jar)
Instructions
- 1. Rinse the mussels under running water.
- 2. Scrub the shells clean with a brush if necessary.
- 3. Remove the beards from the mussels.
- 4. Discard any mussels that are already open.
- 5. Peel the shallots and the garlic.
- 6. Finely chop the shallots and the garlic.
- 7. Heat the oil in a large pot.
- 8. Sauté the shallots and garlic in the hot oil.
- 9. Add the mussels to the pot.
- 10. Pour in the Noilly Prat (a dry vermouth wine).
- 11. Pour the wine into the pot.
- 12. Pour the fish stock into the pot.
- 13. Sprinkle the parsley over the mussels.
- 14. Cover the pot with a lid.
- 15. Bring the mixture to a boil.
- 16. Cook the mussels for 7 to 8 minutes.
- 17. Shake the pot vigorously occasionally while cooking.
- 18. Divide the cooked mussels among soup plates.
- 19. Pour some of the broth over the mussels.
