  1. 1. Put all ingredients into a blender or use a hand blender to mix until you have a smooth batter.
  2. 2. Divide the batter among greased or parchment-lined muffin cups. The smaller you make the muffins, the more pieces you will get from the mixture.
  3. 3. Bake the muffins in the preheated oven at 190°C (convection 170°C or gas mark 2–3) for about 15 minutes on the middle rack. Check for doneness with a wooden skewer before removing, and bake for an additional 2–3 minutes if needed.
  4. 4. Let the muffins cool completely before removing them from the cups and serving to prevent them from crumbling.
