🍰 Savory Muffins with Caramelized Sweet Potatoes and Plums

Ingredients
- 200 g sweet potatoes
- 1 tbsp sunflower oil
- 2 tbsp sugar
- 150 g plums
- 1 tbsp lemon juice
- 250 g flour
- 70 g ground almond kernels
- 2 tbsp sesame seeds
- 2 tsp baking powder
- 1 tsp baking soda
- 1 egg
- 120 g sugar
- 80 ml sunflower oil
- 250 ml milk
Instructions
- 1. Wash the sweet potatoes thoroughly and peel them.
- 2. Cut the sweet potatoes into approx. 1 cm cubes.
- 3. Heat the oil in a pan.
- 4. Add the sweet potato cubes to the hot pan.
- 5. Fry the sweet potatoes for approx. 5 minutes.
- 6. Sprinkle the sugar over the sweet potatoes.
- 7. Lightly caramelize the sugar while stirring for 1-2 minutes.
- 8. Remove the pan from the heat.
- 9. Wash the plums thoroughly.
- 10. Pit the plums.
- 11. Cut the plums into approx. 1 cm cubes.
- 12. Mix the plum cubes with the lemon juice.
- 13. Set the plums aside.
- 14. Preheat the oven to 180°C fan-forced.
- 15. Line the muffin tray cups with paper liners.
- 16. Mix the flour, almonds, sesame seeds, baking powder, and baking soda in a bowl.
- 17. Whisk the egg with the sugar in a separate bowl.
- 18. Stir the oil and milk into the egg-sugar mixture.
- 19. Add the flour mixture to the liquid mixture.
- 20. Mix everything until you have a smooth batter.
- 21. Fold the sweet potatoes into the batter using a spoon.
- 22. Fold the plums into the batter using a spoon.
- 23. Mix the ingredients in the batter until evenly distributed.
- 24. Distribute the batter evenly among the paper liners.
- 25. Bake the muffins for approx. 25 minutes.
- 26. Let the muffins cool in the tray for approx. 5 minutes.
- 27. Remove the muffins from the tray.
- 28. Let the muffins cool completely.
