  1. 1. Preheat the oven to 180 degrees Celsius fan-forced.
  2. 2. Place paper liners into the cups of the muffin tin.
  3. 3. Peel the sweet potatoes and wash them.
  4. 4. Grate the sweet potatoes finely.
  5. 5. Mix the grated sweet potatoes with the chopped almonds.
  6. 6. Add flour, walnuts, sugar, cinnamon, salt, baking powder, and baking soda to a bowl.
  7. 7. Stir the dry ingredients in the bowl well together.
  8. 8. Whisk cream and eggs in a second bowl.
  9. 9. Add the egg cream mixture and the melted butter to the flour mixture.
  10. 10. Stir everything briefly until the dry ingredients are moist.
  11. 11. Fold the sweet potato almond mixture into the batter.
  12. 12. Fill the batter into the prepared paper liners.
  13. 13. Bake the muffins in the preheated oven for about 25 minutes.
  14. 14. Let the muffins cool slightly in the tin.
  15. 15. Remove the muffins from the tin and let them cool completely.
