🍰 Sweet Potato Muffins

Ingredients
- 150 g sweet potatoes
- 50 g chopped almond kernels
- 100 g flour
- 50 g ground walnuts
- 75 g brown sugar
- 1 tsp cinnamon powder
- 1 pinch salt
- 2 tsp baking powder
- 1 pinch baking soda
- 100 ml whipping cream
- 2 eggs
- 80 g melted butter
Instructions
- 1. Preheat the oven to 180 degrees Celsius fan-forced.
- 2. Place paper liners into the cups of the muffin tin.
- 3. Peel the sweet potatoes and wash them.
- 4. Grate the sweet potatoes finely.
- 5. Mix the grated sweet potatoes with the chopped almonds.
- 6. Add flour, walnuts, sugar, cinnamon, salt, baking powder, and baking soda to a bowl.
- 7. Stir the dry ingredients in the bowl well together.
- 8. Whisk cream and eggs in a second bowl.
- 9. Add the egg cream mixture and the melted butter to the flour mixture.
- 10. Stir everything briefly until the dry ingredients are moist.
- 11. Fold the sweet potato almond mixture into the batter.
- 12. Fill the batter into the prepared paper liners.
- 13. Bake the muffins in the preheated oven for about 25 minutes.
- 14. Let the muffins cool slightly in the tin.
- 15. Remove the muffins from the tin and let them cool completely.
