Ingredients
- 500 g flour
- 1 pack baking powder
- 4 eggs
- 500 g yogurt
- 100 g sour cream
- 200 g sugar
- 4 drops vanilla flavoring
- 160 ml oil
- 500 g apricots
Instructions
- 1. Grease the muffin tins generously with butter or oil and dust them lightly with flour.
- 2. Alternatively, place paper liners into the indentations of the muffin trays.
- 3. Preheat the oven to 160 degrees Celsius with fan assistance.
- 4. Add the flour and baking powder to a large mixing bowl.
- 5. Mix the dry ingredients thoroughly together.
- 6. Cut the drained fruit into small cubes.
- 7. Gently fold the fruit cubes into the flour mixture.
- 8. Place the yogurt, sour cream, eggs, vanilla flavoring, and sugar into a separate bowl.
- 9. Whisk the wet ingredients vigorously until they are well combined.
- 10. Stir the oil into the yogurt mixture.
- 11. Add the flour mixture to the wet mass.
- 12. Stir everything briefly until the ingredients are just moist.
- 13. Distribute the batter evenly onto the prepared muffin trays.
- 14. Bake the muffins in the preheated oven for about 25 to 30 minutes.
- 15. Take the muffins out of the oven.
- 16. Let them rest for ten minutes in the molds.
- 17. Carefully remove the muffins from the molds.
- 18. Place them on a cake rack.
- 19. Let the muffins cool down completely.
