🍳 Crunchy Granola Bars with Cranberries

Ingredients
- 100 g almond kernels
- 80 g hazelnut kernels
- 60 g cashew kernels (4 tbsp)
- 80 g dried cranberries (sweetened with fruit juice)
- 200 g rolled oats
- 25 g sesame seeds (2 tbsp)
- 45 g sunflower seeds (3 tbsp)
- 2 egg whites
- 1 pinch salt
- 125 g melted butter
- 120 g liquid honey
Instructions
- 1. Roughly chop all nuts.
- 2. Toast the nuts in a hot pan without oil over medium heat for 3 minutes.
- 3. Remove the pan from the heat.
- 4. Transfer the nuts to a bowl.
- 5. Let the nuts cool completely.
- 6. Roughly chop the cranberries.
- 7. Mix the cooled nuts, cranberries, oat flakes, sesame seeds, and sunflower seeds in a large bowl.
- 8. Beat the egg whites with a pinch of salt until stiff.
- 9. Stir the butter and honey into the dry mixture.
- 10. Combine the ingredients well.
- 11. Gently fold the stiffly beaten egg whites into the mixture.
- 12. Line a baking sheet (approx. 20 x 30 cm) with baking paper.
- 13. Spread the mixture onto the sheet.
- 14. Smooth the mixture into a rectangle (approx. 20 x 28 cm).
- 15. Press the layer down firmly.
- 16. Bake the slab in a preheated oven at 170 °C top and bottom heat for 15 to 20 minutes.
- 17. Ensure the slab does not turn too dark.
- 18. Remove the sheet from the oven.
- 19. Let the baked good cool completely.
- 20. Cut the baked good into rectangular bars with a sharp knife.
