🍽️ Easter shortbread cookies

Ingredients
- 2 egg yolks
- 250 g soft butter
- 150 g sugar
- 1 tbsp lemon juice
- 400 g flour
- 0.25 tsp baking powder
- 200 g powdered sugar
- 2 tbsp lemon juice
- food coloring
- sugar pearls
Instructions
- 1. Separate the eggs by separating the yolks from the whites. Beat the butter together with the sugar and the egg yolks until creamy, then mix in the lemon juice.
- 2. Add the flour and baking powder and quickly knead everything into a smooth dough. Shape the dough into a ball, wrap it in plastic wrap, and place it in the refrigerator for 30 minutes.
- 3. Roll the dough on a work surface lightly dusted with flour to a thickness of about 1 centimeter. Cut out shapes like bunnies or chickens and place them on a baking sheet lined with baking paper.
- 4. Bake the cookies in the preheated oven at 180 degrees for 10 to 15 minutes until golden brown. Remove them and let them cool on the tray.
- 5. Mix powdered sugar with lemon juice to make a glaze. Set aside a small amount of the glaze, color the rest with food coloring as desired, and brush the cookies with it. Use the light glaze to draw details like eyes on the edges and decorate with sugar pearls.
