  1. 1. Take the soft butter and add the egg yolk, sugar, flour, and chopped ginger.
  2. 2. Work all ingredients together by hand or with a machine until a smooth dough forms.
  3. 3. Shape the dough into a ball and wrap it tightly in cling film.
  4. 4. Place the foil-wrapped ball in the refrigerator for 60 minutes to let the dough rest.
  5. 5. Dust your work surface with some flour and roll out the dough to a thickness of about 4 millimeters.
  6. 6. Use a star-shaped cutter to cut out several stars from the dough.
  7. 7. Place the dough stars on a baking sheet that you have lined with baking paper.
  8. 8. Decorate the stars with thin strips of fresh ginger.
  9. 9. Preheat your oven to 200 degrees.
  10. 10. Put the tray in the oven and bake the stars for about 20 minutes until they are light yellow.
  11. 11. Remove the tray and let the stars cool down completely on it.
