  1. 1. Mix flour, ground almonds, a pinch of salt, sugar, and the grated lemon zest in a large bowl.
  2. 2. Take cold butter in small pieces and rub it into the flour mixture with your fingers until it resembles fine sand.
  3. 3. Add the egg yolk and the sour cream.
  4. 4. Quickly knead the ingredients together into a smooth dough.
  5. 5. Wrap the dough tightly in cling film.
  6. 6. Place the dough in the refrigerator for at least one hour to chill thoroughly.
  7. 7. Preheat the oven to 180 degrees Celsius with top and bottom heat.
  8. 8. Line a baking tray with baking paper.
  9. 9. Lightly dust a work surface with flour.
  10. 10. Roll out the dough on the floured surface until thin.
  11. 11. Cut out 40 round cookies using a cutter with a diameter of about 6 cm.
  12. 12. Use a smaller cutter or a glass to cut a hole with a diameter of about 3 cm in the center of exactly half of the cookies.
  13. 13. Arrange all the cookies on the prepared baking paper.
  14. 14. Bake the cookies in the preheated oven for 10 to 12 minutes until golden brown.
  15. 15. Remove the cookies from the oven and let them cool down completely on the rack.
  16. 16. Put the jam into a small saucepan.
  17. 17. Mix the jam with 6 tablespoons of water.
  18. 18. Heat the mixture while stirring constantly until it is smooth.
  19. 19. Let the jam cook down at low heat for about 5 minutes until it thickens slightly.
  20. 20. Spread the warm jam on the bottom of the cookies without holes.
  21. 21. Place the cookies with the hole on top of the jam-spread cookies.
  22. 22. Press the two halves together slightly so they stick.
  23. 23. Let the finished cookies cool down completely before serving.
  24. 24. Finally, dust the cooled cookies with powdered sugar.
