🍰 Sand Shortbread Cookies with Jam Center

Ingredients
- 200 g flour
- 100 g ground almond kernels
- 1 pinch salt
- 75 g sugar
- 1 tbsp organic lemon zest
- 180 g cold butter
- 3 egg yolks
- 1 tbsp sour cream
- flour (for the work surface)
- 200 g strawberry jam
- powdered sugar (for dusting)
Instructions
- 1. Mix flour, ground almonds, a pinch of salt, sugar, and the grated lemon zest in a large bowl.
- 2. Take cold butter in small pieces and rub it into the flour mixture with your fingers until it resembles fine sand.
- 3. Add the egg yolk and the sour cream.
- 4. Quickly knead the ingredients together into a smooth dough.
- 5. Wrap the dough tightly in cling film.
- 6. Place the dough in the refrigerator for at least one hour to chill thoroughly.
- 7. Preheat the oven to 180 degrees Celsius with top and bottom heat.
- 8. Line a baking tray with baking paper.
- 9. Lightly dust a work surface with flour.
- 10. Roll out the dough on the floured surface until thin.
- 11. Cut out 40 round cookies using a cutter with a diameter of about 6 cm.
- 12. Use a smaller cutter or a glass to cut a hole with a diameter of about 3 cm in the center of exactly half of the cookies.
- 13. Arrange all the cookies on the prepared baking paper.
- 14. Bake the cookies in the preheated oven for 10 to 12 minutes until golden brown.
- 15. Remove the cookies from the oven and let them cool down completely on the rack.
- 16. Put the jam into a small saucepan.
- 17. Mix the jam with 6 tablespoons of water.
- 18. Heat the mixture while stirring constantly until it is smooth.
- 19. Let the jam cook down at low heat for about 5 minutes until it thickens slightly.
- 20. Spread the warm jam on the bottom of the cookies without holes.
- 21. Place the cookies with the hole on top of the jam-spread cookies.
- 22. Press the two halves together slightly so they stick.
- 23. Let the finished cookies cool down completely before serving.
- 24. Finally, dust the cooled cookies with powdered sugar.
