Ingredients
- 125 g whole wheat flour
- 125 g wheat flour Type 550
- 65 g raw cane sugar
- 1 pinch salt
- 1 egg
- 125 g yogurt butter (room temperature)
Instructions
- 1. Add both types of flour and the raw cane sugar to a large mixing bowl.
- 2. Distribute the salt, the egg, and the butter evenly over the flour mixture.
- 3. Turn the hand mixer with the dough hooks to the lowest setting.
- 4. Mix the ingredients gently until no more flour dusts out of the bowl.
- 5. Increase the mixer speed to the highest setting.
- 6. Continue kneading the dough until it breaks into small crumbs.
- 7. Remove the bowl from the mixer and quickly knead the crumbs together with your hands to form a smooth dough.
- 8. Wrap the dough tightly in plastic wrap.
- 9. Place the dough in the refrigerator for about 30 minutes to chill.
- 10. Now continue processing the shortcrust pastry according to the instructions of your desired recipe.
