🍰 Crispy Apple Cake with Caramel Sauce

Ingredients
- 200 g spelt whole wheat flour
- 115 g butter
- 80 g whole cane sugar
- 1 pinch salt
- 1 egg
- 600 g apples
- 2 tbsp lemon juice
- 20 ml apple juice
Instructions
- 1. Quickly knead flour, 100 g butter, 40 g whole cane sugar, a pinch of salt, and one egg into a dough.
- 2. Wrap the dough in cling film and place it in the refrigerator for a while.
- 3. Wash the apples, peel them, cut them into quarters, remove the core, and slice them into wedges.
- 4. Drizzle the apple wedges with lemon juice to prevent them from browning.
- 5. Roll out the cold dough on a lightly floured work surface into a round shape.
- 6. Place the dough into a tart pan, greasing it lightly if necessary.
- 7. Layer the apple wedges in an overlapping pattern (like roof tiles) onto the dough.
- 8. Distribute the remaining butter in small flakes evenly over the apples.
- 9. Preheat the oven: 200 °C conventional heat, 180 °C fan-forced, or gas level 3.
- 10. Bake the cake on the middle rack for approx. 30 minutes.
- 11. Remove the cake from the oven after baking.
- 12. Slowly melt the remaining whole cane sugar in a hot pan until it caramelizes (caramelize = melt sugar until it turns brown and aromatic).
- 13. Deglaze the caramel by carefully adding apple juice.
- 14. Pour the finished caramel sauce over the warm cake.
