  2. 2. Cut the mozzarella balls in half.
  3. 3. Fold the thin Parma ham slices slightly.
  4. 4. Wrap the ham pieces around the mozzarella halves.
  5. 5. Cut the chive stems into short pieces.
  6. 6. Blanch the chive pieces briefly in boiling water.
  7. 7. Use the warm chive pieces to tie the ham to the mozzarella balls.
  8. 8. Wash the tomatoes thoroughly.
  9. 9. Cut the tomatoes in half.
  10. 10. Wash the rocket (arugula).
  11. 11. Remove thick stems or wilted leaves from the rocket.
  12. 12. Shake the rocket dry.
  13. 13. Place the tomato halves, rocket, and ham-mozzarella balls on a platter.
  14. 14. Whisk the vinegar with the lemon juice.
  15. 15. Stir the olive oil into the vinegar-lemon mixture.
  16. 16. Season the sauce with salt, sugar, and cayenne pepper.
  17. 17. Drizzle the sauce over the plated dish.
  18. 18. Sprinkle ground colored pepper over it.
  19. 19. Garnish the dish with fresh basil leaves.
