  1. 1. Peel the avocado and cut it in half.
  2. 2. Carefully remove the pit.
  3. 3. Scoop out the flesh and mash it finely with a fork.
  4. 4. Wash the spring onions and trim off the dry ends.
  5. 5. Finely chop the spring onions.
  6. 6. Mix the avocado flesh with about 80 grams of crème fraîche and the horseradish.
  7. 7. Season the cream with lemon juice, salt, and black pepper.
  8. 8. Spread the avocado cream onto small bowls or plates.
  9. 9. Finely chop the salmon.
  10. 10. Whip the cream until it is stiff.
  11. 11. Mix the chopped salmon with the remaining crème fraîche.
  12. 12. Gently fold the whipped cream into the salmon mixture.
  13. 13. Season the salmon mousse with black pepper and lemon juice.
  14. 14. Scoop small balls (nuggets) from the salmon mousse.
  15. 15. Place the salmon nuggets on top of the avocado cream.
  16. 16. Sprinkle the dish with ground black pepper.
  17. 17. Garnish with crushed pink peppercorns.
  18. 18. Serve the dish immediately.
