🍰 Salmon Mousse on Creamy Avocado Base

Ingredients
- 2 Avocados
- 4 Spring onions
- 100 g Crème fraîche
- 1 tsp Horseradish (jar)
- 1 tsp Lemon juice
- Salt
- Pepper
- 150 g Smoked salmon
- 50 ml Whipping cream
- pink peppercorns
Instructions
- 1. Peel the avocado and cut it in half.
- 2. Carefully remove the pit.
- 3. Scoop out the flesh and mash it finely with a fork.
- 4. Wash the spring onions and trim off the dry ends.
- 5. Finely chop the spring onions.
- 6. Mix the avocado flesh with about 80 grams of crème fraîche and the horseradish.
- 7. Season the cream with lemon juice, salt, and black pepper.
- 8. Spread the avocado cream onto small bowls or plates.
- 9. Finely chop the salmon.
- 10. Whip the cream until it is stiff.
- 11. Mix the chopped salmon with the remaining crème fraîche.
- 12. Gently fold the whipped cream into the salmon mixture.
- 13. Season the salmon mousse with black pepper and lemon juice.
- 14. Scoop small balls (nuggets) from the salmon mousse.
- 15. Place the salmon nuggets on top of the avocado cream.
- 16. Sprinkle the dish with ground black pepper.
- 17. Garnish with crushed pink peppercorns.
- 18. Serve the dish immediately.
