  1. 1. Get a heatproof bowl and a pot with a little water.
  2. 2. Chop the chocolate roughly.
  3. 3. Place the bowl with the chocolate over the hot water (bain-marie).
  4. 4. Let the chocolate melt slowly.
  5. 5. Separate the eggs. Set the egg yolks aside.
  6. 6. Whisk the egg yolks with the liqueur until frothy.
  7. 7. Remove the chocolate bowl from the water bath.
  8. 8. Stir the egg yolk mixture into the chocolate with a wooden spoon.
  9. 9. Let the chocolate cream cool down briefly.
  10. 10. Whip the cream until it is semi-stiff.
  11. 11. Whip the egg whites until stiff.
  12. 12. Add 10 grams of sugar to the egg whites while whipping.
  13. 13. Gently fold the whipped cream into the chocolate cream.
  14. 14. Gently fold the whipped egg whites into the mixture.
  15. 15. Fill the mousse into glasses.
  16. 16. Place the glasses in the refrigerator for 40 minutes.
  17. 17. Heat a frying pan.
  18. 18. Roast the pine nuts in the dry pan.
  19. 19. Add the butter to the pan.
  20. 20. Sprinkle 10 grams of sugar over the butter.
  21. 21. Add a small pinch of salt.
  22. 22. Let the butter melt and caramelize.
  23. 23. Place the caramelized pine nuts on a slightly oiled plate.
  24. 24. Let the pine nuts cool down.
  25. 25. Break the caramel into small pieces.
  26. 26. Place the caramel pieces on the mousse just before serving.
  27. 27. Garnish the mousse with raspberries.
