🍰 Creamy Chocolate Mousse with Caramelized Pine Nuts

Ingredients
- 75 g dark chocolate (min. 70 % cocoa content)
- 1 egg
- 2 tbsp coffee liqueur
- 125 ml reduced-fat whipping cream
- 1 egg white
- 30 g pine nuts
- 1 tsp butter
- 20 g raw cane sugar
- salt
- raspberries (for garnish)
Instructions
- 1. Get a heatproof bowl and a pot with a little water.
- 2. Chop the chocolate roughly.
- 3. Place the bowl with the chocolate over the hot water (bain-marie).
- 4. Let the chocolate melt slowly.
- 5. Separate the eggs. Set the egg yolks aside.
- 6. Whisk the egg yolks with the liqueur until frothy.
- 7. Remove the chocolate bowl from the water bath.
- 8. Stir the egg yolk mixture into the chocolate with a wooden spoon.
- 9. Let the chocolate cream cool down briefly.
- 10. Whip the cream until it is semi-stiff.
- 11. Whip the egg whites until stiff.
- 12. Add 10 grams of sugar to the egg whites while whipping.
- 13. Gently fold the whipped cream into the chocolate cream.
- 14. Gently fold the whipped egg whites into the mixture.
- 15. Fill the mousse into glasses.
- 16. Place the glasses in the refrigerator for 40 minutes.
- 17. Heat a frying pan.
- 18. Roast the pine nuts in the dry pan.
- 19. Add the butter to the pan.
- 20. Sprinkle 10 grams of sugar over the butter.
- 21. Add a small pinch of salt.
- 22. Let the butter melt and caramelize.
- 23. Place the caramelized pine nuts on a slightly oiled plate.
- 24. Let the pine nuts cool down.
- 25. Break the caramel into small pieces.
- 26. Place the caramel pieces on the mousse just before serving.
- 27. Garnish the mousse with raspberries.
