🍽️ Delicate Morel Mushrooms with Crispy Chicory

Ingredients
- 350 g fresh morel
- 4 chicory
- 1 shallot
- 1 garlic clove
- 2 tbsp olive oil
- 150 ml dry white wine
- 150 ml vegetable broth
- 100 ml whipping cream
- 2 tbsp butter
Instructions
- 1. Thoroughly rinse the morel mushrooms under running water.
- 2. Remove any dirt and pat the mushrooms dry with a kitchen towel.
- 3. Wash the chicory and cut it in half lengthwise.
- 4. Peel the shallot and the garlic.
- 5. Finely chop the shallot and garlic.
- 6. Heat oil in a pot.
- 7. Sauté the chopped shallot and garlic in the hot oil until translucent.
- 8. Add the morel mushrooms to the pot.
- 9. Sauté the mushrooms briefly.
- 10. Deglaze the mixture with wine.
- 11. Pour in the broth.
- 12. Let the mushrooms cook in the liquid for a few minutes until tender.
- 13. Add the cream.
- 14. Season the sauce with salt and pepper.
- 15. Let the sauce simmer slightly until it thickens.
- 16. Melt butter in a hot pan.
- 17. Fry the chicory in the butter until golden brown.
- 18. Plate the chicory.
- 19. Drizzle the morel sauce over the chicory.
- 20. Sprinkle the dish with pink peppercorns if desired.
