🍰 Poppy Seed Crumble Cake

Ingredients
- 300 g wheat wholemeal flour
- 1 cube fresh yeast
- 1 tbsp sugar
- 200 g lukewarm milk
- 1 pinch salt
- 50 g soft butter
- 100 g ground hazelnuts
- 100 g brown raw sugar
- 1 tsp cinnamon
- 1 packet vanilla sugar
- 100 g butter
- 1 tbsp liquid honey
- 250 ml milk
- 2 eggs
- 250 g ground poppy seeds
- 15 g wheat wholemeal flour
- 50 g brown cane sugar
- 50 g ground hazelnuts
- 50 g butter
- butter (for the baking sheet)
- flour (for the work surface)
Instructions
- 1. Dissolve the yeast in the milk.
- 2. Stir the sugar into the yeast milk until the mixture is smooth.
- 3. Put the flour in a bowl.
- 4. Add the chopped butter to the flour.
- 5. Salt the mixture.
- 6. Pour the yeast milk over the dry ingredients.
- 7. Knead everything with the dough hooks of the hand mixer into an elastic dough.
- 8. Cover the bowl.
- 9. Let the dough rise in a warm place for 45 minutes.
- 10. Roast the hazelnuts in a pot without fat.
- 11. Wait until the nuts start to smell fragrant.
- 12. Stir the sugar into the nuts.
- 13. Add the cinnamon.
- 14. Add the vanilla sugar.
- 15. Stir the butter into the mixture.
- 16. Stir until the butter has melted.
- 17. Pour in the honey.
- 18. Pour the milk into the nut mixture.
- 19. Bring the mixture to a boil while stirring.
- 20. Stir the poppy seeds into the boiling mixture.
- 21. Cook everything for 1 minute until you have a smooth mass.
- 22. Transfer the poppy seed mixture into a bowl.
- 23. Let the mixture cool down for approx. 30 minutes, stirring occasionally.
- 24. Stir the eggs into the cooled poppy seed mixture one by one.
- 25. Work the dough on a floured work surface.
- 26. Roll out the dough to the size of a baking sheet.
- 27. Place the dough on the baking sheet.
- 28. Spread the poppy seed mixture evenly over the dough.
- 29. Smooth out the poppy seed mixture.
- 30. Mix flour, sugar, hazelnuts, and butter for the crumble topping.
- 31. Rub the crumble ingredients between your fingers to form crumbs.
- 32. Distribute the crumbs over the poppy seed mixture.
- 33. Preheat the oven to 180 degrees.
- 34. Place the baking sheet on the lower rack.
- 35. Bake the cake for approx. 35 to 40 minutes until golden brown.
- 36. Take the cake out of the oven.
- 37. Let the cake cool down.
