🍰 Chocolate Poppy Seed Stars

Ingredients
- 150 g Butter
- 60 g Cane sugar
- 1 pinch Cinnamon
- 1 Egg yolk
- 1 Vanilla pod
- 150 g Spelt flour
- 2 tbsp Poppy seeds (Plus additional poppy seeds for sprinkling)
- 100 g Couverture chocolate
- 1 tbsp Cocoa powder
Instructions
- 1. Preheat the oven to 180 degrees Celsius conventional heat (or 160 degrees Celsius fan-forced).
- 2. Beat the butter, brown sugar, and egg yolk in a bowl until creamy.
- 3. Slice the vanilla pod lengthwise and scrape out the seeds.
- 4. Stir the vanilla seeds, cinnamon, flour, and poppy seeds into the dough.
- 5. Remove two tablespoons of the light dough and stir in cocoa powder.
- 6. Fill the remaining light dough into a piping bag fitted with a large star tip.
- 7. Pipe star-shaped rosettes onto a baking sheet lined with baking paper.
- 8. Fill the dark chocolate dough into a small piping bag with a round tip.
- 9. Place a small dot of dark dough in the center of each poppy seed star.
- 10. Sprinkle the cookies with poppy seeds.
- 11. Bake the cookies for about 10 minutes until golden brown.
- 12. Remove the cookies from the oven and let them cool completely on a wire rack.
- 13. Melt the chocolate coating in a double boiler.
- 14. Brush the cooled cookies on the edges with the melted chocolate.
- 15. Let the chocolate dry in the air before serving the cookies.
