Ingredients
- 250 g flour
- 125 g cold butter
- 1 pinch salt
- 1 egg
- 75 g sugar
- 350 g poppy seeds (ground)
- 125 g sugar
- 40 g butter
- 500 ml milk
- lemons
- 50 g raisins
- 50 g almond kernels (finely chopped)
- 150 g powdered sugar
- 2 tbsp lemon juice
Instructions
- 1. Pour the flour onto a clean work surface.
- 2. Mix the flour with a pinch of salt.
- 3. Press a small indentation into the center of the flour mound.
- 4. Cut the cold butter into small cubes.
- 5. Place the butter cubes around the indentation.
- 6. Place the egg in the center of the indentation.
- 7. Sprinkle the sugar over the egg.
- 8. Chop everything with a knife until small crumbs form.
- 9. Quickly knead the mixture into a smooth dough with your hands.
- 10. Shape the dough into a ball.
- 11. Wrap the dough ball in plastic wrap.
- 12. Let the dough rest in the refrigerator for about 30 minutes.
- 13. Place milk, poppy seeds, sugar, butter, and lemon zest in a pot.
- 14. Bring the mixture to a boil.
- 15. Let the mixture simmer gently for about 10 minutes.
- 16. Stir the raisins and almonds into the warm mixture.
- 17. Take two-thirds of the shortcrust dough.
- 18. Lightly flour a work surface.
- 19. Roll out the dough on the floured surface.
- 20. Grease a springform pan.
- 21. Place the dough into the greased springform pan.
- 22. Press the dough to cover the bottom and sides completely.
- 23. Spread the cooled poppy seed filling evenly over the dough base.
- 24. Roll out the remaining dough to match the size of the springform pan.
- 25. Place the dough over the filling as a lid.
- 26. Press the edges firmly together to seal the filling securely.
- 27. Preheat the oven to 200 degrees.
- 28. Place the cake on the middle rack.
- 29. Bake the cake for about 50 minutes.
- 30. Remove the cake from the oven.
- 31. Let the cake cool slightly.
- 32. Carefully release the cake from the pan.
- 33. Place the cake on a cake rack.
- 34. Stir powdered sugar with lemon juice until smooth.
- 35. Brush the still warm poppy seed cake with the glaze.
