🍽️ Crispy Poppy Seed Potato Rings

Ingredients
- 250 g potatoes
- 250 quark
- 1 egg
- 1 egg yolk
- 25 g flour
- 25 g semolina
- 1 tbsp sugar
- 100 g butter
- 6 tbsp poppy seeds
- 2 tbsp powdered sugar
- salt
- flour (for dredging)
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place them in a pot and cover them completely with water.
- 3. Cook the potatoes for 25 minutes until they are soft.
- 4. Drain the cooking water.
- 5. Let the potatoes cool down.
- 6. Peel the cooled potatoes.
- 7. Press the potatoes through a potato ricer.
- 8. Mix the pressed potatoes with quark, sugar, flour, semolina, egg, egg yolk, and salt.
- 9. Knead the ingredients into a smooth dough.
- 10. Take walnut-sized pieces from the dough.
- 11. Coat the dough pieces in flour.
- 12. Roll the dough pieces into spindle shapes between your hands.
- 13. Place the finished noodles side by side on a floured work surface.
- 14. Bring plenty of salted water to a boil in a pot.
- 15. Add the potato noodles in batches to the boiling water.
- 16. Let the noodles cook over gentle heat for 2 minutes.
- 17. Remove the noodles with a slotted spoon.
- 18. Shock the noodles briefly under cold water.
- 19. Let the noodles drain well.
- 20. Heat butter in a pan.
- 21. Fry the potato noodles in the butter until golden yellow.
- 22. Sprinkle the noodles with poppy seeds.
- 23. Sprinkle the noodles with powdered sugar.
- 24. Serve the noodles with compote.
