🍽️ Creamy Carrot Soup with Feta and Cumin

Ingredients
- 2 onions
- 400 g carrots
- 30 g butter
- 3 pinch sugar
- 600 ml vegetable broth
- 1 tsp cumin seeds
- salt
- pepper (from the mill)
- 100 g crème fraîche
- 100 g feta
Instructions
- 1. Peel the onions and the carrots.
- 2. Dice the onions and the carrots into small cubes.
- 3. Heat the butter in a large pot.
- 4. Sauté the onions and carrots in the hot butter.
- 5. Sprinkle the sugar over the vegetables.
- 6. Deglaze the vegetables with the vegetable broth.
- 7. Bring the soup to a boil.
- 8. Simmer the soup over medium heat for about 10 minutes.
- 9. Puree the soup finely in a blender.
- 10. Pour the pureed soup back into the pot.
- 11. Bring the soup back to a boil.
- 12. Stir in the cumin and the crème fraîche.
- 13. Simmer the soup for another 5 minutes over low heat.
- 14. Crumble the feta cheese into small pieces.
- 15. Ladle the soup into bowls.
- 16. Sprinkle the feta over the finished soup.
