🍽️ Fruity and Spicy Carrot Soup with Grapefruit

Ingredients
- 600 g carrots
- 2 grapefruits
- 1 shallot
- 2 tbsp butter
- 800 ml vegetable broth
- 1 tsp ginger (freshly grated)
- 1 tsp honey
- sea salt
- cayenne pepper
Instructions
- 1. Peel the carrots.
- 2. Slice the carrots into thin rounds.
- 3. Remove the thick peel from the grapefruits.
- 4. Cut out the segments (the flesh without skin) from the grapefruits.
- 5. Catch the released juice in a bowl.
- 6. Squeeze the remaining fruit skins to extract more juice.
- 7. Peel the shallot.
- 8. Chop the shallot very finely.
- 9. Heat butter in a pot.
- 10. Sauté the finely chopped shallot in the hot butter.
- 11. Add the ginger and the carrots to the pot.
- 12. Deglaze the vegetables with the broth.
- 13. Place the lid on the pot.
- 14. Let the soup simmer for about 15 minutes.
- 15. Remove three-quarters of the carrots from the pot using a slotted spoon.
- 16. Briefly puree the carrots remaining in the pot.
- 17. Return the removed carrots to the pot.
- 18. Stir the collected grapefruit juice into the soup.
- 19. Stir in the honey.
- 20. Season the soup with salt.
- 21. Season the soup with cayenne pepper.
- 22. Divide the finished soup onto plates.
- 23. Garnish the soup with the grapefruit segments.
