  3. 3. Remove the thick peel from the grapefruits.
  4. 4. Cut out the segments (the flesh without skin) from the grapefruits.
  5. 5. Catch the released juice in a bowl.
  6. 6. Squeeze the remaining fruit skins to extract more juice.
  7. 7. Peel the shallot.
  8. 8. Chop the shallot very finely.
  9. 9. Heat butter in a pot.
  10. 10. Sauté the finely chopped shallot in the hot butter.
  11. 11. Add the ginger and the carrots to the pot.
  12. 12. Deglaze the vegetables with the broth.
  13. 13. Place the lid on the pot.
  14. 14. Let the soup simmer for about 15 minutes.
  15. 15. Remove three-quarters of the carrots from the pot using a slotted spoon.
  16. 16. Briefly puree the carrots remaining in the pot.
  17. 17. Return the removed carrots to the pot.
  18. 18. Stir the collected grapefruit juice into the soup.
