🍽️ Creamy Carrot Sauce

Ingredients
- 250 g carrots
- 1 clove garlic (peeled)
- 1 tsp oregano (dried)
- 0.5 tsp sugar
- salt
- 250 g mayonnaise
- 1 tbsp hot mustard
- 1 tsp lemon juice
- 1 tsp horseradish
- cayenne pepper
Instructions
- 1. Wash the carrots and peel them.
- 2. Slice most of the carrots into round discs.
- 3. Cut thin strips from half a carrot for garnish.
- 4. Blanch these strips briefly in boiling water until tender-crisp.
- 5. Add 100 milliliters of water, sugar, and salt to a pot.
- 6. Bring the mixture to a boil.
- 7. Add the carrot discs, oregano, and garlic.
- 8. Simmer everything for about 15 minutes until soft.
- 9. Remove the pot from the heat when the liquid has almost evaporated.
- 10. Let the mixture cool down.
- 11. Puree the cooled carrot mixture until smooth.
- 12. Stir in the mayonnaise until the sauce is creamy.
- 13. Season the sauce with lemon juice and horseradish.
- 14. Fill the sauce into jars.
- 15. Garnish the jars with the prepared carrot strips.
