  1. 1. Wash the carrots and peel them.
  2. 2. Slice most of the carrots into round discs.
  3. 3. Cut thin strips from half a carrot for garnish.
  4. 4. Blanch these strips briefly in boiling water until tender-crisp.
  5. 5. Add 100 milliliters of water, sugar, and salt to a pot.
  6. 6. Bring the mixture to a boil.
  7. 7. Add the carrot discs, oregano, and garlic.
  8. 8. Simmer everything for about 15 minutes until soft.
  9. 9. Remove the pot from the heat when the liquid has almost evaporated.
  10. 10. Let the mixture cool down.
  11. 11. Puree the cooled carrot mixture until smooth.
  12. 12. Stir in the mayonnaise until the sauce is creamy.
  13. 13. Season the sauce with lemon juice and horseradish.
  14. 14. Fill the sauce into jars.
  15. 15. Garnish the jars with the prepared carrot strips.
