  1. 1. Whisk the yogurt with 2 tablespoons of almonds, lemon juice, salt, and a pinch of pepper in a blender until creamy. Wash the lemon balm, shake it dry, chop the leaves very finely, and stir them into the sauce.
  2. 2. Peel the carrots, grate them coarsely, and mix them with the sauce. Wash the apple, remove the core, grate it coarsely as well, and fold it into the salad.
  3. 3. Chop the remaining almonds coarsely, toast them in a pan without fat, and sprinkle them over the finished salad.
