🍽️ Carrot Salad

Ingredients
- 150 g Yogurt
- 3 tbsp Almond kernels (peeled)
- 1 tbsp Lemon juice
- 0.25 tsp Salt (pepper)
- 0.5 bunch Lemon balm
- 400 g Carrots
- 1 Apple
Instructions
- 1. Whisk the yogurt with 2 tablespoons of almonds, lemon juice, salt, and a pinch of pepper in a blender until creamy. Wash the lemon balm, shake it dry, chop the leaves very finely, and stir them into the sauce.
- 2. Peel the carrots, grate them coarsely, and mix them with the sauce. Wash the apple, remove the core, grate it coarsely as well, and fold it into the salad.
- 3. Chop the remaining almonds coarsely, toast them in a pan without fat, and sprinkle them over the finished salad.
