  1. 1. Pour boiling water over the eggs and let them cook for about 10 minutes.
  2. 2. Remove the eggs from the water, rinse them under cold water, and peel them.
  3. 3. Finely chop the peeled eggs.
  4. 4. Peel all the carrots.
  5. 5. Boil one large, thick carrot in salted water until soft.
  6. 6. Remove the cooked carrot from the water and pat it dry with a cloth.
  7. 7. Slice the soft carrot into 0.6 cm thick rounds.
  8. 8. Use a cookie cutter to cut flower shapes out of the carrot slices.
  9. 9. Grate the rest of the raw carrots finely.
  10. 10. Mix the grated carrots with the chopped eggs.
  11. 11. Whisk the oil with the vinegar.
  12. 12. Season the dressing mixture with salt and pepper.
  13. 13. Pour the dressing over the carrot-egg mixture and mix everything well.
  14. 14. Taste the slaw again and adjust seasoning if needed.
  15. 15. Divide the mixture among small bowls.
  16. 16. Garnish the bowls with the carrot flowers and fresh parsley.
  17. 17. Serve the dish.
