🍽️ Carrot slaw with hard-boiled eggs

Ingredients
- 4 eggs
- 500 g carrots
- salt
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- pepper (from the mill)
- parsley (for garnishing)
Instructions
- 1. Pour boiling water over the eggs and let them cook for about 10 minutes.
- 2. Remove the eggs from the water, rinse them under cold water, and peel them.
- 3. Finely chop the peeled eggs.
- 4. Peel all the carrots.
- 5. Boil one large, thick carrot in salted water until soft.
- 6. Remove the cooked carrot from the water and pat it dry with a cloth.
- 7. Slice the soft carrot into 0.6 cm thick rounds.
- 8. Use a cookie cutter to cut flower shapes out of the carrot slices.
- 9. Grate the rest of the raw carrots finely.
- 10. Mix the grated carrots with the chopped eggs.
- 11. Whisk the oil with the vinegar.
- 12. Season the dressing mixture with salt and pepper.
- 13. Pour the dressing over the carrot-egg mixture and mix everything well.
- 14. Taste the slaw again and adjust seasoning if needed.
- 15. Divide the mixture among small bowls.
- 16. Garnish the bowls with the carrot flowers and fresh parsley.
- 17. Serve the dish.
