🍽️ Spiced Carrot and Celery Stew

Ingredients
- 800 g Carrots
- 1 Celery stalk
- 1 Shallot
- 2 tbsp Vegetable oil
- 0.25 tsp Cumin seeds
- 0.25 tsp Ground coriander
- 0.5 tsp Turmeric
- 250 ml Vegetable broth (vegan)
- 1 handful Basil
- Salt
- Pepper (freshly ground)
- 1 pinch Sugar
- 1 drop Lemon juice
Instructions
- 1. Peel the carrots and slice them into thin rounds.
- 2. Wash the celery, remove any tough fibers, and slice it thinly.
- 3. Peel the shallot and dice it finely.
- 4. Heat oil in a pot and sauté the shallots until soft.
- 5. Add cumin and turmeric and toast the spices briefly.
- 6. Add the carrots and celery to the pot.
- 7. Deglaze the vegetables with the broth.
- 8. Cook the vegetables for 5 to 7 minutes.
- 9. Wash the basil and shake off excess water.
- 10. Pluck the leaves from the stems.
- 11. Set aside 4 leaves for garnish.
- 12. Finely chop the remaining basil.
- 13. Season the stew with salt, pepper, sugar, and lemon juice.
- 14. Spoon the vegetable mixture into small bowls.
- 15. Sprinkle the chopped basil over the dish.
- 16. Garnish with the four reserved basil leaves.
- 17. Serve the vegetables, for example, with garlic flatbread.
