🍽️ Creamy Carrot Soup with Cream

Ingredients
- 500 g carrots
- 100 g onions (1 onion)
- 2 garlic cloves
- 1 piece fresh ginger (approx. 3 cm)
- 125 g celery stalks
- 1 l vegetable broth
- 30 g butter
- 1 tbsp honey
- 5 tbsp whipping cream
- 3 tbsp lime juice
- salt
- pepper (from the mill)
- 2 tbsp chive rings
Instructions
- 1. Peel the carrots, trim the ends, and cut them into small pieces.
- 2. Peel the onion, garlic, and ginger, and finely dice them.
- 3. Wash the celery, remove tough strings, and chop it finely.
- 4. Heat the butter in a pot, add the vegetables, and sauté over low heat for about 10 minutes.
- 5. Pour in the broth and simmer for another 20 minutes. Remove from heat, blend until smooth, and optionally pass through a sieve. Reheat the mixture.
- 6. Stir in honey, cream, and lime juice, and season to taste with salt and pepper.
- 7. Serve the creamy carrot soup garnished with fresh chives.
- 8. Optionally sprinkle with paper-thin fried carrot slices for decoration.
