  1. 1. Peel the carrots, trim the ends, and cut them into small pieces.
  2. 2. Peel the onion, garlic, and ginger, and finely dice them.
  3. 3. Wash the celery, remove tough strings, and chop it finely.
  4. 4. Heat the butter in a pot, add the vegetables, and sauté over low heat for about 10 minutes.
  5. 5. Pour in the broth and simmer for another 20 minutes. Remove from heat, blend until smooth, and optionally pass through a sieve. Reheat the mixture.
  6. 6. Stir in honey, cream, and lime juice, and season to taste with salt and pepper.
  7. 7. Serve the creamy carrot soup garnished with fresh chives.
  8. 8. Optionally sprinkle with paper-thin fried carrot slices for decoration.
