🍽️ Creamy Carrot Soup with Ginger and Orange Zest

Ingredients
- 600 g carrots
- 1 onion
- 2 cm fresh ginger
- 2 tbsp vegetable oil
- 200 ml orange juice
- 600 ml vegetable broth
- salt
- pepper (from the mill)
- 1 tbsp orange zest
- basil (for garnishing)
Instructions
- 1. Peel the carrots, the onion, and the piece of ginger.
- 2. Cut all three ingredients into small cubes.
- 3. Heat the oil in a large pot.
- 4. Add the onion cubes and the ginger pieces to the pot.
- 5. Sauté the vegetables over medium heat for a short time until fragrant.
- 6. Add the carrot cubes and sauté them briefly as well.
- 7. Deglaze the mixture with the orange juice.
- 8. Pour in the vegetable broth.
- 9. Season the soup with salt and pepper.
- 10. Let the soup simmer over medium heat for 20 to 25 minutes.
- 11. Puree the soup finely using a hand blender.
- 12. Taste the soup again and adjust the seasoning with salt and pepper.
- 13. Sprinkle some orange zest (grated peel) on top as a garnish.
- 14. Decorate the bowl with fresh basil leaves.
- 15. Serve the soup with an extra pinch of pepper.
