  1. 1. Peel the onion and the garlic clove and chop them roughly. Peel the carrots and the apple and cut them into small cubes.
  2. 2. Melt the butter in a large pot. Sauté the onion and garlic pieces until fragrant. Add the carrot and apple pieces and fry briefly. Sprinkle the flour over them and pour in the broth. Bring the mixture to a boil and let it simmer for 20 minutes. Season with salt.
  3. 3. Puree the soup until smooth. Stir in the beaten egg yolks and the sour cream.
  4. 4. Divide the soup among the plates. Garnish with cream stripes, fresh parsley, and a pinch of cayenne pepper.
