🥗 Fresh Carrot, Celery, and Apple Salad

Ingredients
- 4 carrots
- 1 celery root
- 1 apple
- 2 tbsp apple cider vinegar
- 2 tbsp lemon juice
- 1 tsp honey
- 4 tbsp nut oil (40 ml each)
- salt
- pepper (from the mill)
- 2 tbsp fresh chopped parsley
Instructions
- 1. Wash the carrots, celery, and apple under running water.
- 2. Dry the vegetables and apple with a kitchen towel.
- 3. Peel the carrots, celery, and apple.
- 4. Cut the apple into four quarters.
- 5. Remove the core from the apple quarters.
- 6. Grate the carrots, celery, and apple pieces into fine strips.
- 7. Whisk the vinegar, lemon juice, honey, and oil together in a small bowl.
- 8. Season the dressing generously with salt and pepper.
- 9. Pour the dressing over the vegetables and apple strips.
- 10. Toss everything well so that everything is evenly coated.
- 11. Let the salad marinate for about 15 minutes.
- 12. Finally, taste the salad and adjust the seasoning with salt and pepper if needed.
- 13. Finely chop fresh parsley.
- 14. Sprinkle the chopped parsley over the salad.
- 15. Serve the salad immediately.
