  1. 1. Wash the carrots thoroughly.
  2. 2. Peel the carrots carefully.
  3. 3. Leave the small stem end attached to the carrots.
  4. 4. Peel the garlic clove.
  5. 5. Dice the garlic very finely.
  6. 6. Wash the thyme sprigs.
  7. 7. Shake the thyme sprigs dry.
  8. 8. Remove the fine thyme tips and set them aside.
  9. 9. Chop the remaining thyme roughly.
  10. 10. Whisk the mustard with the maple syrup in a bowl.
  11. 11. Add the roughly chopped thyme to the mustard mixture.
  12. 12. Season the mixture with salt.
  13. 13. Season the mixture with pepper.
  14. 14. Add the orange juice to the mixture.
  15. 15. Add the finely diced garlic to the mixture.
  16. 16. Add the oil to the mixture.
  17. 17. Whisk all sauce ingredients well.
  18. 18. Place the peeled carrots into the sauce.
  19. 19. Toss the carrots so they are completely coated with the sauce.
