  1. 1. Peel the carrots and trim the green tops, leaving about 2 centimeters of stem.
  2. 2. Heat the oil in a pot and sauté the carrots over low heat for 4 minutes.
  3. 3. Add the orange juice and the grated orange zest.
  4. 4. Season the mixture with salt, sugar, and pepper.
  5. 5. Simmer the carrots gently under a lid for about 6 minutes.
  6. 6. Increase the heat at the end to evaporate any remaining liquid completely.
  7. 7. Remove the carrots from the pot and let them cool down.
  8. 8. Wash the arugula, pick out any damaged leaves, and spin it dry.
  9. 9. Wrap each individual carrot in a small portion of arugula and then in a slice of ham.
  10. 10. Arrange the wrapped carrots on a plate.
  11. 11. Finally, sprinkle them with ground salt and pepper and serve.
