🍽️ Italian-style Carrots Wrapped in Rucola and Ham

Ingredients
- 16 young carrots (with greens)
- 2 tbsp olive oil
- 1 untreated orange (juice and zest)
- salt
- 1 pinch sugar
- pepper (from the mill)
- 1 bunch arugula
- 16 slices Parma ham
Instructions
- 1. Peel the carrots and trim the green tops, leaving about 2 centimeters of stem.
- 2. Heat the oil in a pot and sauté the carrots over low heat for 4 minutes.
- 3. Add the orange juice and the grated orange zest.
- 4. Season the mixture with salt, sugar, and pepper.
- 5. Simmer the carrots gently under a lid for about 6 minutes.
- 6. Increase the heat at the end to evaporate any remaining liquid completely.
- 7. Remove the carrots from the pot and let them cool down.
- 8. Wash the arugula, pick out any damaged leaves, and spin it dry.
- 9. Wrap each individual carrot in a small portion of arugula and then in a slice of ham.
- 10. Arrange the wrapped carrots on a plate.
- 11. Finally, sprinkle them with ground salt and pepper and serve.
