🍽️ Yeast Dough Bread Filled with Spinach, Chard, and Cheese

Ingredients
- 21 g yeast (0.5 cube)
- 500 g flour
- 0.5 tsp fine sea salt
- 0.5 tsp sugar
- 2 tbsp olive oil
- flour (for working)
- 500 g spinach
- 500 g chard
- salt
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 40 g grated parmesan
- pepper
- 150 g Parma ham (in slices)
- 400 g ricotta
Instructions
- 1. Dissolve the yeast in 100 milliliters of lukewarm water.
- 2. Mix the flour with salt and sugar in a large bowl.
- 3. Add the yeast mixture and olive oil to the flour.
- 4. Knead everything with the hand mixer.
- 5. Gradually add another 150 milliliters of lukewarm water.
- 6. Knead until a soft dough forms that no longer sticks to the bowl.
- 7. Cover the bowl.
- 8. Let the dough rise in a warm place for about 45 minutes.
- 9. Wash the spinach and chard.
- 10. Remove the tough stems.
- 11. Shake the vegetables dry.
- 12. Cut the chard stems into strips.
- 13. Boil the stems for about 1 minute in salted water (this is called blanching, i.e., cooking briefly in boiling water).
- 14. Immediately rinse the vegetables with cold water.
- 15. Let the vegetables drain.
- 16. Briefly blanch the chard leaves and spinach.
- 17. Rinse them.
- 18. Squeeze the vegetables well.
- 19. Chop the vegetables coarsely.
- 20. Peel the onion and garlic.
- 21. Dice them finely.
- 22. Sauté both in hot oil.
- 23. Cook until they are translucent.
- 24. Mix in the blanched vegetables.
- 25. Remove the pan from the heat.
- 26. Sprinkle the Parmesan over it.
- 27. Season with salt and pepper.
- 28. Preheat the oven to 200 degrees Celsius fan-assisted.
- 29. Knead the dough again on a lightly floured work surface.
- 30. Divide the dough into two equal parts.
- 31. Roll both parts out to the size of your baking sheet.
- 32. Place one piece of dough on the baking sheet lined with baking paper.
- 33. Distribute the vegetables evenly on top.
- 34. Leave a narrow border around the edge.
- 35. Place the ham on top.
- 36. Crumble the well-drained ricotta over it.
- 37. Cover everything with the second piece of dough.
- 38. Press the edges firmly together.
- 39. Ensure that the filling is completely enclosed.
- 40. Bake the bread in the oven for about 40 minutes until golden brown.
- 41. Remove the bread from the oven.
- 42. Let it cool down briefly.
- 43. Cut it into pieces.
- 44. Serve it warm or cold.
