  1. 1. Dissolve the yeast in 100 milliliters of lukewarm water.
  2. 2. Mix the flour with salt and sugar in a large bowl.
  3. 3. Add the yeast mixture and olive oil to the flour.
  4. 4. Knead everything with the hand mixer.
  5. 5. Gradually add another 150 milliliters of lukewarm water.
  6. 6. Knead until a soft dough forms that no longer sticks to the bowl.
  7. 7. Cover the bowl.
  8. 8. Let the dough rise in a warm place for about 45 minutes.
  9. 9. Wash the spinach and chard.
  10. 10. Remove the tough stems.
  11. 11. Shake the vegetables dry.
  12. 12. Cut the chard stems into strips.
  13. 13. Boil the stems for about 1 minute in salted water (this is called blanching, i.e., cooking briefly in boiling water).
  14. 14. Immediately rinse the vegetables with cold water.
  15. 15. Let the vegetables drain.
  16. 16. Briefly blanch the chard leaves and spinach.
  17. 17. Rinse them.
  18. 18. Squeeze the vegetables well.
  19. 19. Chop the vegetables coarsely.
  20. 20. Peel the onion and garlic.
  21. 21. Dice them finely.
  22. 22. Sauté both in hot oil.
  23. 23. Cook until they are translucent.
  24. 24. Mix in the blanched vegetables.
  25. 25. Remove the pan from the heat.
  26. 26. Sprinkle the Parmesan over it.
  27. 27. Season with salt and pepper.
  28. 28. Preheat the oven to 200 degrees Celsius fan-assisted.
  29. 29. Knead the dough again on a lightly floured work surface.
  30. 30. Divide the dough into two equal parts.
  31. 31. Roll both parts out to the size of your baking sheet.
  32. 32. Place one piece of dough on the baking sheet lined with baking paper.
  33. 33. Distribute the vegetables evenly on top.
  34. 34. Leave a narrow border around the edge.

  36. 36. Crumble the well-drained ricotta over it.
  37. 37. Cover everything with the second piece of dough.
  38. 38. Press the edges firmly together.
  39. 39. Ensure that the filling is completely enclosed.
  40. 40. Bake the bread in the oven for about 40 minutes until golden brown.
  41. 41. Remove the bread from the oven.
  42. 42. Let it cool down briefly.
