🍽️ Juicy Beef Loin with Creamy Spinach Filling

Ingredients
- 1.5 kg Beef Loin (narrow end piece)
- 2 tbsp Worcestershire sauce
- 1 level tsp Cayenne pepper
- 6 tbsp Sunflower oil
- 600 g Spinach
- 4 Shallots
- Olive oil
- Salt
- Pepper (from the mill)
- 600 g Broccoli
- 4 tbsp Butter
- 4 tbsp Almond flakes
Instructions
- 1. Preheat the oven to 250 degrees. Place the rack in the center and the roasting pan on the bottom rail.
- 2. Mix the Worcestershire sauce, cayenne pepper, and oil in a small bowl.
- 3. Rub the meat all over with the spice mixture.
- 4. Using a sharp knife, cut a deep pocket into the side of the meat without cutting all the way through.
- 5. Wash the spinach thoroughly and let it drain well.
- 6. Peel the shallots and chop them into fine pieces.
- 7. Heat 2 tablespoons of olive oil in a large pan.
- 8. Add the spinach to the pan and let it wilt under a lid over medium heat.
- 9. Let the spinach cool slightly and then chop it finely.
- 10. Season the spinach with salt and plenty of pepper.
- 11. Squeeze the spinach well in a fine sieve to remove excess liquid.
- 12. Heat another 2 tablespoons of olive oil in a clean pan.
- 13. Sauté the shallots in it until translucent.
- 14. Mix the shallots with the drained spinach in a bowl.
- 15. Stuff the beef loin with the spinach mixture.
- 16. Close the opening with 1 to 2 toothpicks.
- 17. Place the meat on the rack in the oven.
- 18. Roast the meat for about 15 minutes.
- 19. Reduce the oven temperature to 200 degrees.
- 20. Pour about 500 milliliters of hot water into the roasting pan below.
- 21. Continue roasting the meat for another 25 minutes.
- 22. Turn off the oven and let the meat rest inside for another 10 minutes.
- 23. Remove the meat from the oven and let it cool.
- 24. Remove the toothpicks from the meat.
- 25. Slice the meat into 1.5 centimeter thick slices.
- 26. Wash the broccoli and cut it into small florets.
- 27. Boil the broccoli for 7 minutes in boiling salted water.
- 28. Let the broccoli drain in a sieve.
- 29. Toast the sliced almonds without fat in a pan.
- 30. Melt the butter in a small pan.
- 31. Add the toasted almonds to the melted butter.
- 32. Season the almond butter with salt and pepper.
- 33. Plate the meat slices with the broccoli.
- 34. Drizzle the dish with the almond butter and serve.
