🍽️ Tomatoes Baked with Jarlsberg Cheese

Ingredients
- 8 tomatoes
- 100 g grated Jarlsberg (®)
- 50 ml balsamic vinegar
- 4 garlic cloves (, pressed)
- 100 ml olive oil (, extra virgin)
- salt (and pepper)
- 4 tbsp fresh thyme (, chopped)
- 50 g toasted pine nuts
- fresh basil
Instructions
- 1. Preheat the oven to 180 degrees Celsius.
- 2. Cut the tomatoes in half.
- 3. Mix balsamic vinegar, olive oil, garlic, thyme, salt, and pepper in a bowl.
- 4. Toss the tomato halves in the marinade until well coated.
- 5. Place the tomatoes in a baking dish with the cut side facing down.
- 6. Bake the tomatoes in the oven for 15 minutes.
- 7. Remove the dish from the oven and let the tomatoes cool down briefly.
- 8. Peel the skin off the tomatoes.
- 9. Spread the grated Jarlsberg cheese evenly over the tomatoes.
- 10. Turn on the grill and bake the tomatoes for 5 minutes until the cheese is golden brown.
- 11. Sprinkle the tomatoes with toasted pine nuts.
- 12. Garnish the dish with fresh basil leaves.
- 13. Serve the tomatoes hot with fresh bread.
