  1. 1. Peel the kohlrabi and slice the bottom flat so they stand stably.
  2. 2. Hollow out the kohlrabi, but leave a border of about 1 cm thick.
  3. 3. Finely dice the removed kohlrabi flesh and place it in a bowl.
  4. 4. Peel the onions and celery and dice them finely as well.
  5. 5. Add the diced onion and celery to the kohlrabi in the bowl and mix everything well.
  6. 6. Take 3 to 4 tablespoons of this vegetable mixture and place it in a second bowl.
  7. 7. Add the minced meat, egg yolk, thyme, and pine nuts to the vegetable mixture in the second bowl.
  8. 8. Season the filling with salt and pepper.
  9. 9. Fill the kohlrabi halves with the minced meat mixture.
  10. 10. Heat oil in an ovenproof casserole dish.
  11. 11. Sauté the remaining vegetable mixture over medium heat for about 5 minutes.
  12. 12. Deglaze the vegetables with the broth.
  13. 13. Place the stuffed kohlrabi into the broth in the casserole dish.
  14. 14. Preheat the oven to 200 °C (convection 180 °C or gas mark 3).
  15. 15. Bake the kohlrabi for about 45 minutes in the preheated oven.
  16. 16. Pour the liquid from the casserole dish over the kohlrabi repeatedly while baking.
  17. 17. Add more broth if necessary to prevent drying out.
  18. 18. Blanch the tomatoes briefly with hot water and shock them in cold water.
  19. 19. Remove the skin from the tomatoes and quarter them.
  20. 20. Remove the seeds from the tomatoes and dice them finely.
  21. 21. Wash the parsley and shake it dry.
  22. 22. Finely chop the parsley.
  23. 23. Add the diced tomatoes to the finished sauce in the casserole dish.
  24. 24. Sprinkle the finished kohlrabi with the chopped parsley.
  25. 25. Serve the dishes with whole wheat baguette.
