🍽️ Stuffed Kohlrabi Boats

Ingredients
- 4 large kohlrabi
- 2 onions
- 250 g celeriac
- 250 g lamb mince
- 1 egg yolk
- 0.5 tsp dried thyme
- 30 g pine nuts (2 tbsp)
- salt
- pepper
- 2 tbsp olive oil
- 350 ml vegetable broth
- 2 tomatoes
- 0.5 bunch parsley (10 g)
- 1 whole wheat baguette
Instructions
- 1. Peel the kohlrabi and slice the bottom flat so they stand stably.
- 2. Hollow out the kohlrabi, but leave a border of about 1 cm thick.
- 3. Finely dice the removed kohlrabi flesh and place it in a bowl.
- 4. Peel the onions and celery and dice them finely as well.
- 5. Add the diced onion and celery to the kohlrabi in the bowl and mix everything well.
- 6. Take 3 to 4 tablespoons of this vegetable mixture and place it in a second bowl.
- 7. Add the minced meat, egg yolk, thyme, and pine nuts to the vegetable mixture in the second bowl.
- 8. Season the filling with salt and pepper.
- 9. Fill the kohlrabi halves with the minced meat mixture.
- 10. Heat oil in an ovenproof casserole dish.
- 11. Sauté the remaining vegetable mixture over medium heat for about 5 minutes.
- 12. Deglaze the vegetables with the broth.
- 13. Place the stuffed kohlrabi into the broth in the casserole dish.
- 14. Preheat the oven to 200 °C (convection 180 °C or gas mark 3).
- 15. Bake the kohlrabi for about 45 minutes in the preheated oven.
- 16. Pour the liquid from the casserole dish over the kohlrabi repeatedly while baking.
- 17. Add more broth if necessary to prevent drying out.
- 18. Blanch the tomatoes briefly with hot water and shock them in cold water.
- 19. Remove the skin from the tomatoes and quarter them.
- 20. Remove the seeds from the tomatoes and dice them finely.
- 21. Wash the parsley and shake it dry.
- 22. Finely chop the parsley.
- 23. Add the diced tomatoes to the finished sauce in the casserole dish.
- 24. Sprinkle the finished kohlrabi with the chopped parsley.
- 25. Serve the dishes with whole wheat baguette.
