🍽️ Apple Crêpes with Cider Sauce

Ingredients
- 2 Eggs
- 100 g Flour
- Sugar
- 250 ml Milk
- 3 sweet Apples (e.g. Golden Delicious)
- 40 ml Calvados
- 0.5 tbsp Cornstarch
- 250 ml Cider
- 400 g Vanilla Ice Cream (from the freezer section)
- Butter
- Icing Sugar
- Parchment Paper
Instructions
- 1. Whisk the eggs, 40 g sugar, and the flour together with a whisk until creamy.
- 2. Melt 15 g of butter in a small saucepan.
- 3. Stir in the milk and the melted butter gradually into the egg mixture.
- 4. Let the batter rest for 1 hour.
- 5. Wash the apples and peel them. Set the peels aside.
- 6. Halve the apples, remove the core, and cut the flesh into small cubes.
- 7. Heat 40 g of butter in a frying pan.
- 8. Sauté the apple cubes until they are tender but still firm.
- 9. Sprinkle 40 g of powdered sugar over the apples.
- 10. Deglaze the pan with Calvados and stir briefly.
- 11. Remove the apple mixture from the heat.
- 12. Heat 30 g of butter in a saucepan for the sauce.
- 13. Add the reserved apple peels to the hot butter.
- 14. Sprinkle the mixture with cornstarch and sugar.
- 15. Sauté the ingredients while stirring.
- 16. Deglaze the pan with cider.
- 17. Simmer the sauce over medium heat until it thickens.
- 18. Strain the sauce through a fine mesh sieve.
- 19. Keep the sauce warm.
- 20. Heat about 15 g of butter in a small non-stick pan at a time.
- 21. Bake many small crêpes from the batter.
- 22. Bake the crêpes golden brown on both sides.
- 23. Stack the finished crêpes on top of each other and keep them warm.
- 24. Fill the crêpes with the apple cubes.
- 25. Fold the filled crêpes in half twice.
- 26. Line a baking tray with baking paper.
- 27. Place the folded crêpes on the tray.
- 28. Generously sprinkle the crêpes with powdered sugar.
- 29. Preheat the oven to 250°C.
- 30. Bake the crêpes for 2 to 3 minutes in the hot oven.
- 31. Plate the crêpes on small plates.
- 32. Add a scoop of vanilla ice cream to each plate.
- 33. Drizzle the warm cider sauce over the crêpes.
- 34. Serve the dishes immediately.
