  1. 1. Whisk the eggs, 40 g sugar, and the flour together with a whisk until creamy.
  2. 2. Melt 15 g of butter in a small saucepan.
  3. 3. Stir in the milk and the melted butter gradually into the egg mixture.
  4. 4. Let the batter rest for 1 hour.
  5. 5. Wash the apples and peel them. Set the peels aside.
  6. 6. Halve the apples, remove the core, and cut the flesh into small cubes.
  7. 7. Heat 40 g of butter in a frying pan.
  8. 8. Sauté the apple cubes until they are tender but still firm.
  9. 9. Sprinkle 40 g of powdered sugar over the apples.
  10. 10. Deglaze the pan with Calvados and stir briefly.
  11. 11. Remove the apple mixture from the heat.
  12. 12. Heat 30 g of butter in a saucepan for the sauce.
  13. 13. Add the reserved apple peels to the hot butter.
  14. 14. Sprinkle the mixture with cornstarch and sugar.
  15. 15. Sauté the ingredients while stirring.
  16. 16. Deglaze the pan with cider.
  17. 17. Simmer the sauce over medium heat until it thickens.
  18. 18. Strain the sauce through a fine mesh sieve.
  19. 19. Keep the sauce warm.
  20. 20. Heat about 15 g of butter in a small non-stick pan at a time.
  21. 21. Bake many small crêpes from the batter.
  22. 22. Bake the crêpes golden brown on both sides.
  23. 23. Stack the finished crêpes on top of each other and keep them warm.
  24. 24. Fill the crêpes with the apple cubes.
  25. 25. Fold the filled crêpes in half twice.
  26. 26. Line a baking tray with baking paper.
  27. 27. Place the folded crêpes on the tray.
  28. 28. Generously sprinkle the crêpes with powdered sugar.
  29. 29. Preheat the oven to 250°C.
  30. 30. Bake the crêpes for 2 to 3 minutes in the hot oven.
  31. 31. Plate the crêpes on small plates.
  32. 32. Add a scoop of vanilla ice cream to each plate.
  33. 33. Drizzle the warm cider sauce over the crêpes.
  34. 34. Serve the dishes immediately.
