🍲 Marinated Chicken with Miso Broth

Ingredients
- 400 g chicken breast fillet (2 chicken breast fillets)
- 30 g ginger (1 piece)
- 1 tbsp sesame oil
- 4 tbsp teriyaki sauce
- 4 spring onions
- 2 tbsp sesame
- salt
- pepper
- 1 l poultry broth
- 40 g miso paste
- 2 tbsp light soy sauce
Instructions
- 1. Rinse the chicken breast fillets under cold water.
- 2. Pat the fillets dry with a kitchen towel.
- 3. Place the chicken breast into a bowl.
- 4. Peel the ginger.
- 5. Grate half of the ginger finely.
- 6. Spread the grated ginger over the chicken.
- 7. Drizzle sesame oil over the meat.
- 8. Add teriyaki sauce.
- 9. Place the bowl in the refrigerator for 20 minutes to let the marinade penetrate.
- 10. Cut the remaining ginger into thin strips.
- 11. Clean the spring onions.
- 12. Wash the spring onions.
- 13. Slice the spring onions diagonally into thin rounds.
- 14. Heat a frying pan over medium heat.
- 15. Toast the sesame seeds without added fat until golden brown.
- 16. Remove the pan from the heat.
- 17. Take the chicken breast out of the marinade.
- 18. Pat the meat dry again.
- 19. Season the chicken with salt.
- 20. Season the chicken with pepper.
- 21. Heat a grill pan.
- 22. Grill the chicken breast from the first side for 6 to 8 minutes.
- 23. Grill the chicken breast from the second side for another 6 to 8 minutes.
- 24. Wrap the finished fillets in aluminum foil.
- 25. Let the meat rest for 5 minutes.
- 26. Pour the poultry broth into a pot.
- 27. Bring the broth to a boil.
- 28. Add the miso paste to the hot broth.
- 29. Stir the miso paste until it has completely dissolved.
- 30. Slice the chicken fillets.
- 31. Distribute the chicken slices onto deep plates.
- 32. Add the cut ginger strips.
- 33. Add the spring onion slices.
- 34. Pour the miso broth over the meat and vegetables.
- 35. Season the soup finally with soy sauce.
- 36. Sprinkle the finished soup with the toasted sesame seeds.
- 37. Serve the miso soup immediately.
