🍲 Light Shiitake Miso Soup

Ingredients
- 50 g small shiitake mushrooms (cleaned)
- 2 tsp light miso paste
- 1 tsp miso paste
- 2 tbsp fine rings of spring onions
- 1 tsp wakame seaweed (seaweed for miso soup)
- 600 ml water
- 1 piece dashi kelp
- 2 tbsp bonito flakes
- dandelion
Instructions
- 1. Add the dashi seaweed and bonito flakes to a pot.
- 2. Cover everything with water and bring the mixture to a boil.
- 3. Remove the pot from the heat and let the broth steep for ten minutes.
- 4. Strain the broth through a fine mesh sieve to remove the solids.
- 5. Stir the miso paste into the warm broth until it is completely dissolved.
- 6. Bring the soup back to a boil briefly.
- 7. Add the shiitake mushrooms and wakame seaweed to the soup.
- 8. Let the ingredients cook briefly until they are heated through.
- 9. Divide the soup among small bowls.
- 10. Garnish each portion with sliced spring onions and dandelion greens.
