🍲 Spicy Miso Ramen Soup

Ingredients
- 1 small piece ginger (peeled and chopped)
- 1 small chili pepper (chopped)
- 1 white onion (chopped)
- 1 small broccoli
- 1 –2 carrot
- 100 g shiitake mushrooms (plus more mushrooms)
- 1 tbsp sesame oil
- 1 l vegetable broth
- 4 tbsp tamari
- 3 tbsp miso paste
- 0.5 tsp sesame seeds
- 1 lime
- 3 tbsp rice vinegar
- 125 g ramen noodles
- 1 hard-boiled egg
Instructions
- 1. Wash the vegetables thoroughly.
- 2. Peel the vegetables roughly.
- 3. Finely chop the ginger.
- 4. Finely chop the chili pepper.
- 5. Finely chop the onion.
- 6. Clean the mushrooms to remove dirt.
- 7. Halve the mushrooms.
- 8. Heat oil in a large pot.
- 9. Add the onions, chili, and ginger to the pot.
- 10. Sauté the vegetables until they become translucent.
- 11. Add the remaining vegetables and mushrooms to the pot.
- 12. Fry everything for another minute.
- 13. Pour the vegetable broth into the pot.
- 14. Add the soy sauce to the broth.
- 15. Stir the miso paste into the broth.
- 16. Add the sesame seeds to the broth.
- 17. Let the soup simmer gently for about 10 minutes.
- 18. Remove the soup from the heat.
- 19. Mix the miso broth with tamari.
- 20. Add lime juice to the soup.
- 21. Add rice vinegar to the soup.
- 22. Season the soup with the ingredients.
- 23. Cook the ramen noodles according to package instructions.
- 24. Distribute the noodles onto the bowls.
- 25. Pour the broth with the vegetables over the noodles.
- 26. Place half an egg in each bowl.
