🍳 Savory Miso Oatmeal with Poached Eggs and Spinach

Ingredients
- 300 g baby spinach
- 1 clove garlic
- 5 tbsp olive oil
- 1 tsp chili flakes
- 1 tsp ground cumin
- 0.5 tsp ground coriander
- 0.5 tsp sweet paprika powder
- 500 ml vegetable broth
- 100 g rolled oats
- 1 tbsp light miso paste (15 g each)
- salt
- 2 tbsp vinegar
- 4 eggs
- 70 g grated Gouda (45% fat in dry matter)

Instructions
- 1. Thoroughly wash the spinach under running water.
- 2. Dry the spinach well with a kitchen towel.
- 3. Peel the garlic.
- 4. Slice the garlic into thin pieces.
- 5. Heat four tablespoons of oil in a pan over medium heat.
- 6. Add the garlic, chili flakes, cumin, coriander, and paprika powder to the hot pan.
- 7. Sauté the spices while stirring constantly for one to two minutes.
- 8. Remove the pan from the heat as soon as the spices smell fragrant.
- 9. Bring the broth to a boil in a pot.
- 10. Stir the oats into the boiling broth.
- 11. Stir the miso paste into the oatmeal mixture.
- 12. Let the oatmeal mixture simmer for about ten minutes.
- 13. Fill a large pot with plenty of water.
- 14. Add salt and vinegar to the water.
- 15. Bring the water to a boil.
- 16. Crack one egg carefully into a soup ladle.
- 17. Stir the boiling water with a spoon to create a swirling whirlpool.
- 18. Gently slide the egg from the ladle into the whirlpool.
- 19. Cook the egg over low heat for about four minutes.
- 20. Repeat steps 16 to 19 for the remaining eggs.
- 21. Lift the cooked eggs out of the water carefully.
- 22. Let the eggs drain on a plate.
- 23. Heat the remaining oil in a separate pan.
- 24. Add the prepared spinach to the hot pan.
- 25. Fry the spinach over medium heat for one to two minutes.
- 26. Turn the spinach occasionally until it has wilted.
- 27. Stir the cheese into the finished miso oatmeal.
- 28. Continue stirring until the cheese has completely melted.
- 29. Season the oatmeal to taste with salt and pepper.
- 30. Divide the oatmeal evenly onto the plates.
- 31. Place the fried spinach on top of the oatmeal.
- 32. Place one cooked egg on each plate.
- 33. Drizzle the finished dish with the seasoned chili oil.
