🍽️ Crunchy Grain Mixed Bread

Ingredients
- 50 g millet
- 250 g rye flour (Type 1050)
- 275 g wheat flour (Type 812)
- 22 g baking malt
- 50 g buckwheat groats (or flakes)
- 7 g wheat gluten
- 10 g salt
- 2 tbsp bread spice
- 15 g fresh yeast
- 100 g sourdough
- 75 g sunflower seeds
- 4 tbsp rolled oats
- 4 tbsp flaxseeds
- flour (for working)
- sunflower seeds (for sprinkling)
Instructions
- 1. Place the millet in a bowl and cover it with a little water.
- 2. Cover the bowl and let the millet soak overnight.
- 3. The next day, drain the soaked millet.
- 4. Let the millet drain well.
- 5. Mix the two types of flour, the baking malt, the buckwheat groats, the gluten, the salt, and the bread spice in a large mixing bowl.
- 6. Dissolve the yeast in a small amount of lukewarm water.
- 7. Add the dissolved yeast and the sourdough starter to the flour mixture.
- 8. Add the drained millet, the sunflower seeds, the oat flakes, and the flaxseed.
- 9. Pour in 250 to 350 milliliters of lukewarm water.
- 10. Knead everything into a medium-firm dough.
- 11. The dough should still be slightly sticky.
- 12. Cover the bowl and let the dough rest for about 30 minutes.
- 13. Sprinkle some flour on your work surface.
- 14. Take the dough out and knead it briefly again.
- 15. Shape the dough into an oblong loaf.
- 16. Line a baking tray with baking paper.
- 17. Place the bread loaf on the prepared tray.
- 18. Brush the surface of the bread with a little water.
- 19. Sprinkle sunflower seeds over the bread.
- 20. Cover the bread and place it in a warm spot.
- 21. Let the dough rise for about 1 hour, until it has doubled in size.
- 22. Preheat the oven to 220 degrees Celsius with top and bottom heat.
- 23. Generate steam in the oven, if possible.
- 24. Bake the bread for about 1 hour.
- 25. Reduce the heat if the bread is getting too dark.
- 26. Tap the bread to check if it is done.
- 27. The bread is done when it sounds hollow.
