  1. 1. Place the millet in a bowl and cover it with a little water.
  2. 2. Cover the bowl and let the millet soak overnight.
  3. 3. The next day, drain the soaked millet.
  4. 4. Let the millet drain well.
  5. 5. Mix the two types of flour, the baking malt, the buckwheat groats, the gluten, the salt, and the bread spice in a large mixing bowl.
  6. 6. Dissolve the yeast in a small amount of lukewarm water.
  7. 7. Add the dissolved yeast and the sourdough starter to the flour mixture.
  8. 8. Add the drained millet, the sunflower seeds, the oat flakes, and the flaxseed.
  9. 9. Pour in 250 to 350 milliliters of lukewarm water.
  10. 10. Knead everything into a medium-firm dough.
  11. 11. The dough should still be slightly sticky.
  12. 12. Cover the bowl and let the dough rest for about 30 minutes.
  13. 13. Sprinkle some flour on your work surface.
  14. 14. Take the dough out and knead it briefly again.
  15. 15. Shape the dough into an oblong loaf.
  16. 16. Line a baking tray with baking paper.
  17. 17. Place the bread loaf on the prepared tray.
  18. 18. Brush the surface of the bread with a little water.
  19. 19. Sprinkle sunflower seeds over the bread.
  20. 20. Cover the bread and place it in a warm spot.
  21. 21. Let the dough rise for about 1 hour, until it has doubled in size.
  22. 22. Preheat the oven to 220 degrees Celsius with top and bottom heat.
  23. 23. Generate steam in the oven, if possible.
  24. 24. Bake the bread for about 1 hour.
  25. 25. Reduce the heat if the bread is getting too dark.
  26. 26. Tap the bread to check if it is done.
  27. 27. The bread is done when it sounds hollow.
