  1. 1. Put both types of flour into a large bowl and sieve them.
  2. 2. Crumble the yeast finely with your fingers and add it to the flour.
  3. 3. Add the buttermilk, the egg, and the sugar.
  4. 4. Knead the ingredients into a soft dough using the dough hooks of a hand mixer.
  5. 5. Add the butter in large flakes and a pinch of salt to the dough.
  6. 6. Continue kneading until the dough pulls away from the sides of the bowl.
  7. 7. Cover the bowl and let the dough rise in a warm place.
  8. 8. Wait about 40 minutes until the dough volume has doubled.
  9. 9. Rinse the mirabelle plums under running water.
  10. 10. Halve the fruits and remove the pits.
  11. 11. Line a baking tray with baking paper.
  12. 12. Knead the dough once briefly.
  13. 13. Place the dough on the tray and roll it out flat.
  14. 14. Cover the dough again and let it rise for 30 minutes.
  15. 15. Press the mirabelle plums closely together into the dough.
  16. 16. Preheat the oven to 180 °C (160 °C for fan-forced or gas mark 2-3).
  17. 17. Bake the cake on the middle rack for 45 to 50 minutes.
  18. 18. Chop the pistachios roughly with a large knife.
  19. 19. Sprinkle the pistachios over the finished cake.
  20. 20. Dust powdered sugar over the cake using a fine sieve.
  21. 21. Cut the cake into pieces and serve.
