🍰 Juicy Mirabelle Plum Cake from the Tray

Ingredients
- 250 g flour
- 250 g whole wheat flour
- 1 cube yeast
- 250 ml buttermilk (room temperature)
- 1 egg
- 100 g sugar
- 40 g soft butter
- 1 pinch salt
- 1 kg mirabelle plums
- 50 g pistachio kernels
- 40 g powdered sugar (4 tbsp)
Instructions
- 1. Put both types of flour into a large bowl and sieve them.
- 2. Crumble the yeast finely with your fingers and add it to the flour.
- 3. Add the buttermilk, the egg, and the sugar.
- 4. Knead the ingredients into a soft dough using the dough hooks of a hand mixer.
- 5. Add the butter in large flakes and a pinch of salt to the dough.
- 6. Continue kneading until the dough pulls away from the sides of the bowl.
- 7. Cover the bowl and let the dough rise in a warm place.
- 8. Wait about 40 minutes until the dough volume has doubled.
- 9. Rinse the mirabelle plums under running water.
- 10. Halve the fruits and remove the pits.
- 11. Line a baking tray with baking paper.
- 12. Knead the dough once briefly.
- 13. Place the dough on the tray and roll it out flat.
- 14. Cover the dough again and let it rise for 30 minutes.
- 15. Press the mirabelle plums closely together into the dough.
- 16. Preheat the oven to 180 °C (160 °C for fan-forced or gas mark 2-3).
- 17. Bake the cake on the middle rack for 45 to 50 minutes.
- 18. Chop the pistachios roughly with a large knife.
- 19. Sprinkle the pistachios over the finished cake.
- 20. Dust powdered sugar over the cake using a fine sieve.
- 21. Cut the cake into pieces and serve.
