  1. 1. Mix both types of flour with half a teaspoon of salt in a bowl.
  2. 2. Press a well into the center of the flour mixture.
  3. 3. Crumble the yeast into this well.
  4. 4. Pour 250 milliliters of lukewarm water over it.
  5. 5. Knead everything into a smooth dough using the dough hooks of a hand mixer.
  6. 6. Cover the dough and let it rise in a warm place for about 30 minutes.
  7. 7. Wash the eggplant, zucchini, and bell pepper and dry them.
  8. 8. Cut the vegetables into small cubes.
  9. 9. Peel the onion and cut it into cubes.
  10. 10. Peel the garlic and chop it finely.
  11. 11. Heat oil in a non-stick pan.
  12. 12. Sauté the vegetable cubes, onion, and garlic over medium heat, stirring frequently, for 3 minutes.
  13. 13. Add chopped tomatoes and tomato paste.
  14. 14. Bring the mixture to a boil.
  15. 15. Season with oregano, rosemary, and thyme.
  16. 16. Salt and pepper the sauce to taste.
  17. 17. Let the sauce simmer for about 3 minutes over medium heat.
  18. 18. Drain the feta cheese.
  19. 19. Cut the feta cheese into small cubes.
  20. 20. Place the pizza dough on a floured work surface.
  21. 21. Divide the dough into four equal parts.
  22. 22. Take one quarter of the dough and divide it into 10 small portions.
  23. 23. Shape each portion into a mini pizza with a diameter of 7 centimeters.
  24. 24. Line a baking sheet with baking paper.
  25. 25. Arrange the pizzas on the tray.
  26. 26. Top each pizza with one tablespoon of the pepper vegetable mixture.
  27. 27. Sprinkle some feta cheese over it.
  28. 28. Preheat the oven to 225 degrees Celsius (convection: 200 degrees Celsius, gas: level 3-4).
  29. 29. Bake the pizzas on the lowest rack for 12 to 15 minutes.
  30. 30. Remove the pizzas from the oven.
  31. 31. Lift the pizzas off the tray along with the baking paper.
  32. 32. Repeat the process with the remaining three dough quarters.
