🍽️ Mini Pizzas with Pepper Vegetables

Ingredients
- 200 g spelt whole wheat flour
- 200 g spelt flour Type 630
- salt
- 21 g yeast (0.5 cube)
- 300 g eggplants (1 eggplant)
- 250 g zucchini (1 zucchini)
- 200 g yellow bell peppers (1 yellow bell pepper)
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 600 g chunky tomatoes (can; drained weight)
- 2 tbsp tomato paste
- 0.5 tsp dried oregano
- 0.5 tsp dried rosemary
- 0.5 tsp thyme

- 250 g feta cheese
Instructions
- 1. Mix both types of flour with half a teaspoon of salt in a bowl.
- 2. Press a well into the center of the flour mixture.
- 3. Crumble the yeast into this well.
- 4. Pour 250 milliliters of lukewarm water over it.
- 5. Knead everything into a smooth dough using the dough hooks of a hand mixer.
- 6. Cover the dough and let it rise in a warm place for about 30 minutes.
- 7. Wash the eggplant, zucchini, and bell pepper and dry them.
- 8. Cut the vegetables into small cubes.
- 9. Peel the onion and cut it into cubes.
- 10. Peel the garlic and chop it finely.
- 11. Heat oil in a non-stick pan.
- 12. Sauté the vegetable cubes, onion, and garlic over medium heat, stirring frequently, for 3 minutes.
- 13. Add chopped tomatoes and tomato paste.
- 14. Bring the mixture to a boil.
- 15. Season with oregano, rosemary, and thyme.
- 16. Salt and pepper the sauce to taste.
- 17. Let the sauce simmer for about 3 minutes over medium heat.
- 18. Drain the feta cheese.
- 19. Cut the feta cheese into small cubes.
- 20. Place the pizza dough on a floured work surface.
- 21. Divide the dough into four equal parts.
- 22. Take one quarter of the dough and divide it into 10 small portions.
- 23. Shape each portion into a mini pizza with a diameter of 7 centimeters.
- 24. Line a baking sheet with baking paper.
- 25. Arrange the pizzas on the tray.
- 26. Top each pizza with one tablespoon of the pepper vegetable mixture.
- 27. Sprinkle some feta cheese over it.
- 28. Preheat the oven to 225 degrees Celsius (convection: 200 degrees Celsius, gas: level 3-4).
- 29. Bake the pizzas on the lowest rack for 12 to 15 minutes.
- 30. Remove the pizzas from the oven.
- 31. Lift the pizzas off the tray along with the baking paper.
- 32. Repeat the process with the remaining three dough quarters.
